What you hear in the Noise picture is the chain Signals chapter 3 teaches: the hot wire carries the signal, the cold wire carries the same signal upside down, and the same hum lands on both. The input flips the cold wire back and adds the two, so the signal doubles and the hum, now equal and opposite, cancels. For that to work the hum has to land on both wires equally, which is why the two wires are matched to the same impedance. The input here is ideal and cancels the hum exactly; a real one cancels most of it. The hum grows in proportion to the run and its level is set for listening, not measured in a studio. The cores are coloured red and blue for clarity; real cables vary. The guitar lead's curve is a typical pickup and cable, not a product.
The guitar is a stand-in recording until one played straight into the interface replaces it.
